In the first stage of any aquaculture program of a species, it is necessary to know the stages of their initial development. In this study, the development process of the taste organ in the Persian sturgeon (Acipenser persicus) from the time of hatching to the 23 DPH was investigated. For this purpose, after the artificial reproduction of the brood, the larvae were sampled daily from the 1 to 9 DPH, and randomly from the 12, 16, 20, and 20 DPH to prepare SEM electron microscope images. In this fish, the olfactory cavity was observed forming in DPH 1 and in 2 DPH, olfactory receptor cells were seen forming inside the olfactory cavity. From 6 to 8 DPH, olfactory cells increased significantly in terms of number and growth compared to the previous days, and this increase in these days corresponded to the start of active feeding in this fish. In this species, a sudden increase in the number and size of olfactory cells occurred between 12 to 16 DPH. The size and number of olfactory cells remained almost unchanged from 16 DPH onwards, and changes were also observed in the amount of receiving neural signals.
