اثر نمک کروم بر کیفیت چرم تهیه شده ازپوست ماهی خاویاری گونه سیبری( Acipenser baerii )

چکیده

خاویار مهمترین و عمده‌ترین محصول ماهیان خاویاری است، اما در تجارت جهانی فواید حاصل از این ماهیان تنها به خاویار محدود نمی‌شود. از رایج‌ترین گونه‌های پرورشی ماهیان خاویاری در آبزی‌پروری اروپا تاسماهی سیبری(Acipenser baerii) می‌باشد. با توجه به پرورش این گونه از ماهی خاویاری در ایران و با نظر به اینکه امروزه با استفاده از دانش فنی و صنایع فرآوری تلاش می‌شود از سایر اندام‌های این ماهیان از جمله پوست، دستگاه‌گوارش، غضروف، نخاع در صنایع مختلف چرم‌سازی، غذایی، دارویی و آرایشی بهداشتی بهره گیرند، در این تحقیق تاثیر کروم بر کیفیت چرم تولید شده از پوست ماهی خاویاری سیبری مورد بررسی قرار گرفت. در ابتدا از تیمار نسبت نمک به ماهی 1:1 و 1:2 طی نگهداری در زمان‌های 0، 5، 10، 15 و 20 روز جهت انتخاب بهترین تیماراز منظر بار باکتریایی کل استفاده شد، که با توجه به نتایج، تیمار 1:2 و روز 5 شرایط بهتری داشت. آزمایشات انجام شده برای تعیین کیفیت چرم تولید شده شامل: ثبات رنگ، ثبات سایشی، قابلیت دوخت، استحکام کشسانی، استحکام پارگی، ثبات چسبندگی و مقاومت حرارتی می‌باشند. پوست ماهی خاویاری تمام مراحل دباغی کرومی را طی کرد و تمامی آزمایشات فوق جهت بررسی کیفیت چرم تولید شده انجام شد. نتایج حاصل بیانگر کیفیت بوده و از لحاظ ظاهری و فیزیکی قابل قبول بود.

چکیده [English]

Caviar is the most important and the major production of sturgeons, but the benefits of these fish are not limited only to caviar. Acipenser baerii is one of the most common breeding sturgeon species in European aquaculture. According to the breeding this kind of sturgeon in Iran, there are attempt for using the technical knowledge and processing industries for application the other organs including skin, digestive system, cartilage, spinal cord, etc. in the leather, food, pharmaceutical, and cosmetic industries. In this study, the effect of chromium on the quality of produced leather from Acipenser baerii’s skin was investigated. At first, the salt to fish skin ratio 1:1 and 1:2 was carried out during 0, 5, 10, 15 and 20 days to select the best treatment. According to the results, treatment with 1:2 ratio at day 5 was showed the better conditions. The samples were subjected to color stability, abrasion stability, sewing capability, tensile strength, tearing strength, adhesion stability, and thermal resistance experiments to determine the quality of produced lather. The sturgeon's skins were passed all chromium tanning process. All of the above experiments were carried out to evaluate the quality of produced leather. The results are indicated the acceptable quality in terms of physical and apparent.
